The ancient bedouins of Kingdom of Saudi Arabia used a device made of stone or metal called “Havan” for milling and pounding. It was used for preparing pastes and other finely ground elements of cuisine in kitchens. The ingredients to be grounded are placed in a shallow depression in a stone or metal, the mortar, and pounded with a rod like stone or metal, the pestle. As time passed by the shape and designs have modernized. The modern havan is beautifully carved and designed on the outer portion of the metal and on the pestle. The havan is even used till today in pharmacy for preparing medicines and in chemical laboratories for grinding substances. |
